Mexican Chicken Casserole

During the great spring cleaning I found a few things in boxes that I had put away from the wedding. In one of the boxes was a pack of recipe cards that Jonathan's Aunt Barbara gave us and on each card was a different recipe! It was like Christmas for me. I love to cook and I love finding new recipes and I never thought I would find a whole pack of them in my own house. 

Anyway, I pulled out some of the recipes to try this week and tonight I made the Mexican Chicken Casserole. It was delicious!
1 Chicken
2 cans cream of chicken soup
1 can rotel
1 lb velveeta
1 pakage Doritos Cool Ranch

Crush Doritos in a 9 X14 pan. ( I used two 7 x7 cake pans)
De-bone chicken (save enough broth to add to soup)

Mix broth (1-1/2 cups), soup, and rotel. Add velveeta (1/3) and pour mixture over chips. Layer Chicken on top. Bake at 350 degree for 20 minutes. Add slices of velveeta to cover chicken. Bake for 10 minutes or until cheese melts.
