Spring Coconut Cake

I'm so excited to be a part of this blog hop!  I'm sharing my very favorite Springtime recipe! It's my Aunt's Coconut Cake. Once you try it, it will be in your dreams!

recipe coconut cake

Aunt Gwyn's Perfect Coconut Cake

1 box of white cake mix with butter in the mix.-Make the cake as directed, except use the egg yokes (they are too good to waste). I baked in two 8" circular pans.

Icing
16 oz. of sour cream
1 large cool whip
2 bags of frozen coconut flakes
2 cups granulated sugar
1 package dry coconut to add to outside of cake.

Bake the cake and let it cool. Cut the layers in half. Mix sour cream, half container of thawed cool whip and sugar. Use 1/2 icing to layer in between the layers of cake. Add the unused cool whip to the mixture and cover the cake with this icing. Cover with coconut flakes if desired.

Let it sit for 2 days for best results.
(I have never in my life let a delicious cake sit in the fridge for two days... or even a day...)

Feel free to write me a thank you note... :)
